These recipes will change your mind. They’re fun and they’re good for you, and we know they’ll definitely brighten up a gloomy January day. We turned to Delish for some healthy recipes that will bring a new perspective to the first month of the year, and we chose our favourites to share with you.
Caprese Courgetti Salad

Ingredients
- 4 large courgettes
- 2 tbsp. extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella balls, quartered if large
- 1/4 cup fresh basil leaves
- 2 tbsp. balsamic vinegar
Method
- Using a spiraliser, create courgetti out of courgette.
- Add your courgetti to a large bowl, toss with olive oil and season with salt and pepper. Let marinate 15 minutes.
- Add tomatoes, mozzarella and basil to courgetti and toss until combined.
- Drizzle with balsamic and serve.
Bruschetta Grilled Chicken

Ingredients
4 tbsp. extra-virgin olive oil Juice of 1 lemon, divided Kosher salt
- Freshly ground black pepper
- 1 tsp. Italian seasoning or dried oregano
- 4 boneless skinless antibiotic free chicken breasts, pounded to even thickness
- 3 slicing tomatoes, chopped
- 2 cloves garlic, minced
- 1 tbsp. freshly chopped basil
- 4 slices mozzarella
- Freshly grated Parmesan, for serving
Method
- In a small bowl, combine oil, half the lemon juice, 1 teaspoon salt, 1/4 teaspoon pepper, and Italian seasoning (or oregano) and whisk to combine. Transfer to a large re-sealable bag along with chicken; seal and refrigerate for 30 minutes.
- Heat grill over medium-high then add chicken, discarding excess marinade. Grill until charred and cooked to an internal temperature of 165°, about 5 to 7 minutes per side.
- Meanwhile, combine tomatoes, garlic, basil, and remaining lemon juice, and season with salt and pepper. While chicken is still on grill, top each breast with 1 slice mozzarella and cover until cheese is melted, 2 to 3 minutes. Top chicken with tomato mixture.
- Garnish with Parmesan and serve.
Easy Grilled Salmon

Ingredients
- 4 (4-oz.) salmon fillets
- 1 tbsp. Grainy mustard
- 2 cloves garlic, finely minced
- 1 tbsp. finely minced shallots
- 2 tsp. fresh thyme leaves, chopped, plus more for garnish
- 2 tsp. fresh rosemary, chopped
- Juice of 1/2 lemon
- Kosher salt
- Freshly ground black pepper
- Lemon slices, for serving
Method
- Heat grill and line a baking sheet with parchment. In a small bowl, mix together mustard, garlic, shallot, thyme, rosemary, and lemon juice and season with salt and pepper. Spread mixture all over salmon fillets and broil, 7 to 8 minutes.
- Garnish with more thyme and lemon slices and serve.
Cauliflower Crust Pizza

Ingredients
- 1 large head cauliflower, roughly chopped
- 1 large egg
- 2 c. shredded mozzarella, divided
- 1/2 c. freshly grated Parmesan, divided
- kosher salt
- 1/4 c. marinara or pizza sauce
- 2 cloves garlic, minced
- 1 c. grape or cherry tomatoes, halved
- Torn fresh basil, for serving
- Balsamic glaze, for drizzling
Method
- Preheat oven to 200°.
- In a large skillet, bring about 1/4″ water to a boil. Season with salt. Add cauliflower in one even layer and cook until crisp-tender, 3 to 4 minutes. Transfer to a clean dish towel (or paper towels) and squeeze to drain water.
- Add drained cauliflower to food processor and pulse until grated. Drain excess water in paper towels.
- Transfer drained cauliflower to a large bowl and add egg, 1 cup mozzarella and 1/4 cup Parmesan, then season with salt.
- Transfer dough to a baking sheet lined with cooking spray and pat into a crust. Bake until golden and dried out, 20 minutes.
- Top crust with marinara, remaining mozzarella and Parm, garlic and tomatoes and bake until cheese is melted and crust is crisp, 10 minutes more.
- Garnish with basil and drizzle with balsamic glaze.
