You can never go wrong with avocado toast! This recipe is filling, nutritious and, most importantly, really easy to make.
How to check an avocado is ripe
The trick to good avo toast is a nice, ripe, avocado. Check their ripeness by picking off the stem (the little stub at the top) it should come away easily and reveal a dark green spot underneath. If the stem is hard to take off, or the avocado underneath isn’t a bright green colour, they’re not ready yet.
Hot to quickly ripen an avocado
Don’t worry if you find yourself with an unripe avocado on Mother’s Day! You can easily ripen an unpeeled avocado by wrapping it in tin foil and popping it in the oven at 90˚ C for ten to fifteen minutes. After your avo has softened, unwrap it and leave it in the fridge for a few minutes to cool down.
Ingredients
- Half an avocado
- 2 tbsp cooking oil
- 2 slices of bread
- 2 medium eggs
- 1 pinch round sea salt
- 1 pinch cracked black pepper
- 1 pinch chili flakes/oil
- Optional: grated parmesan cheese
Method
- With a spoon, scoop the avocado from it’s peel and place in a bowl before mashing with a fork.
- Add the bread slices to your toaster/under your grill. Keep an eye on them to make sure they don’t burn.
- Heat your preferred cooking oil in a pan and, just as it begins to crackle, crack an egg in. Use a spoon to pour the hot oil over your egg to fry it quickly.
- Spread half of the avocado paste on one slice of toast and top with the freshly fried egg.
- Garnish with salt, pepper an chili flakes/oil.
- Repeat steps 3 and 4 with your remaining ingredients.
- Optional: top with grated parmesan cheese.
