
The perfect Saturday night recipe: noodles.
Is there actually anything better in life than a big bowl of noodles? We didn’t think so. This recipe from Olive Magazine is nutritious, delicious and super easy to whack together for your weekend meal. Whether you’re dining alone on the sofa with Netflix or feeding lots of mouths, you just can’t go wrong with this.
Ingredients
- oil for frying
- onion 1 small, halved and sliced
- red or green pepper 1, sliced into strips
- spring onions 4, sliced including green bits
- raw king prawns 150g, butterflied
- bean sprouts a handful
- fresh ramen or egg noodles 300g
- pink pickled ginger shredded to serve
- black and white sesame seeds to serve
For the Yaki-Soba sauce:
- caster sugar 1 tsp
- soy sauce 1 tbsp
- oyster sauce 1 tbsp
- tomato ketchup 1/2 tbsp
- Worcestershire sauce 1 tbsp
- white pepper 1/4 tsp
Method
- Whisk the sauce ingredients together.
- Heat 2 tbsp oil in a wok or frying pan. Add the onion and pepper and stir fry for 3-4 minutes until soft. Toss in the spring onions and prawns and cook until the prawns are turning pink. Add the bean sprouts, noodles and sauce and toss until hot. Serve topped with the ginger and sesame seeds.
